In this process we pick only the well ripe cherries. Generally it has to be done by by measuring their sugar content (brix grades) during the ripening period but we do it on our own experience, differentiating the colour and softness of the fruit.
Freshly picked cherries are pulped (removing the red skin from the fruit) with their mucilage still fully attached, they are spread on farm patios or drying beds under the sun.
Usual drying takes 10-12 days. At the end of this stage, the water content of the beans should be less than 12% but not below 10%.
